This is a healthier take on wings with a sweet and spicy honey sriracha sauce, which contains no butter. The wings are also baked and not fried. If you’re like me and like a little extra heat, feel free to be a little more generous with your sriracha or add in additional red pepper flakes or fresh bird eye chilis for more of a kick. I served this with spiced carrot fries, which is really genius marketing for roasted carrots that are shaped like fries to trick yourself into thinking you’re eating sweet potato fries.
I’ll admit, this dinner was a bit of a cheat because I didn’t make the lamb koftas at home. Whole Foods has great lamb koftas in their fresh meats section and this is where I get mine when I need to make a quick dinner. Sometimes when you’re balancing work and life, you need options for a quick yet tasty dinner. I serve this with a mushroom couscous and a yogurt dill sauce, both of which are super easy to make. I normally make this with a traditional couscous but because my husband made a last minute grocery run, we found ourselves with tri-color pearl couscous instead because that’s what he saw first.
This dish (Pad Kra Pao) is traditionally eaten with white rice but I threw this over quinoa for less carbs. My mother and grandmother would not approve. I also substituted light soy sauce with coconut aminos in this recipe. To keep it more traditional, make this white rice – it also soaks up the sauce and flavors better.
This is one of my favorite meals. It’s a comfort food and reminds me of the home cooked meals I grew up with. My husband has grown to also love it and will finish off every last bite. I’m lucky enough to have my mom live nearby and because her love language is food, she drops off home cooked items every so often. This includes Vietnamese BBQ pork (or thit nuong). But, you can also make it fairly easily. Another side note? You’ll notice a lot of Asian recipes use things such as fish sauce and different types of soy sauces. These are household staples for me but if you don’t have them, you can find them at HMart or an Asian grocery store. A lot of times, Asian recipes might seem intimidating because of the different ingredients used but this meal is a quick assemble if you prepare the meat the night before.
